How Canadian is this?
A friend of a friend (first nation guy, no less) takes down a moose.
Ends up moving so gifts the moose liver to my friend.
So, the wife and I get this moose liver as this friend and another friend come over for dinner.
To make a long story short, this was our spread:
- Moose liver mousse (french/italian style) with homemeade rye bread as the vehicle to mouth
- Moose liver with a fig, bacon, mushroom compote
- Local (Nanoose Bay) sea asparagus salad
- Sumac infused asian pear and cucumber salad (ok this is a Persian dish)
Love to show pics but not practical on this forum.
I love living in this golden age of globalization: blend of culinary techniques and ingredients that allow us to eat so much from thousands of kilometers away.
